Uneven baking results frustrate everyone who deals with it, but the cause is almost always heat distribution inside the oven, not user error.
Check for a Weak Element
An element glowing unevenly heats the oven cavity unevenly right along with it.
Fix: Watch it during preheat and replace any element that doesn't glow consistently all the way around.
Verify the Temperature Sensor
A sensor that's drifted out of calibration lets the real oven temperature swing well past the setpoint in both directions.
Fix: A technician can measure the sensor's resistance and replace it if it's out of spec.
Mind Air Circulation
Racks packed too tightly, or shelves lined with foil, block the convection airflow the oven depends on.
Fix: Leave open space around each pan and never line the racks with foil.
